With a goal to reduce food waste by 50% in both client and company facilities by 2024, Guckenheimer exceeded this target, announcing in September 2024 a reduction of 64%. On this journey they secured first place for three consecutive years from the Humane Society of the United States for protein sustainability.
Food Waste Reduction Strategies
Partnering with food waste technology providers Winnow & Leanpath, they devised a framework to educate on the impact of food waste on the environment and the business, designed mandatory trainings for operators, and set an ambitious goal.
Championed various competitions across all regions, which drove creativity in repurposing trimmings waste, zero-waste menu engineering, and recognizing high achievers and shared best practices.
Partnered with the Humane Society of the United States to train Plant-Based Ambassadors, while implementing nudging strategies connected to their Coolfood Pledge which commits to carbon footprint reductions connected to food purchasing.
Delivered education on the waste hierarchy principles and partnered with various national and local partners to divert food waste to compost, grey water, biofuel, and animal feed.
Partnered with a multiplicity of food recovery organizations to donate unserved, edible food, to local charities who then distribute to under-served communities in close proximity to business operations.
